Flower batetanu shak- Cauliflower and potatoes (Gujarati way)









Cauliflower and potatoes are cooked together in numerous ways. This version of  stir fry is prepared frequently in Gujarati homes (especially in Vaishnav followers) in winters. It is a no onion preparation with few ingredients. It is delicious when you cook both potato and cauliflower just right (not mushy). Hence water is not added into this and the veggies are allowed to cook along with salt in it's own juices.

Ingredients-




500g cauliflower
3 medium sized potatoes
3 green chillies -slit length wise (optional)
1/2 tsp mustard seeds
 1/4 tsp asafoetida (optional)- but love to add this
1/2 tsp turmeric (haldi) - add if you love yellow hued stir-fry
1/2 tsp chilli pd or more if green chilies are not added
1/2 tsp cumin pd + 1/2 tsp coriander pd
1/4 cup coriander leaves (optional)
3 tbsp oil
Salt 1 tsp or 1.25 tsp (add with care or it will become salty)



  Method-



Cut cauliflower into small pieces. Soak in water for 15 mins. (you can add 1/2 tsp salt in the water).
Drain and rinse once again. Keep this drained cauliflower ready in a colander.
Peel the potatoes and chop into 1/2 or 1 inch cubes.





Heat oil in a non-stick pan and put in mustard seeds, after they splutter add in asafoetida and turmeric. Add green chillies if using.
Stir for a second and immediately add potatoes. Put in 1/2 tsp salt, stir well and cover and cook on low heat.

 


Keep stirring frequently.
 



When the potatoes are half cooked, add cauliflower and 1/2 tsp salt. Cover and cook once again.
Make sure you stir it frequently to avoid it getting burnt.






When the vegetables are done add chilli pd, coriander and cumin pd and fry on a medium flame for 2 minutes.






Garnish with coriander leaves if needed.
It is a tasty side dish with chappatis and phulkas.

For Cooking without kitchen-

Use  1 cup each chopped cauliflower and potatoes.

Cook together oil and potatoes with 1/4 tsp salt ( less salt because the instant masala already has salt) in the electric cooker.
When potatoes start turning golden open the lid.
Add cauliflower pieces and and cook again.
When both are cooked add 1 tbsp Instant chickpea stir fry masala pd.
Give it a good stir and cook for 2 mins stirring well.

Children love to take this in their lunch boxes wrapped into a roll inside ghee smeared phulkas.
